There's nothing like a refreshing cocktail to cut through Hong Kong's infamous humidity. This month, luxurious bars and restaurants such as 8½ Otto e Mezzo BOMBANA, PTD (Please Don't Tell), Dr. Fern's Gin Parlour and Zuma are shaking things up with inventive new tipples that will cool you down in no time.

Amazing Maize

Dr Fern's Gin Parlour introduced the refreshing Maize Collins just in time for summer.
The latest cocktail creation at Dr Fern’s Gin Parlour centres around the satisfying flavours of baby corn and citrus.

Known for its eccentric holiday parties and extensive array of gin, Dr Fern's Gin Parlour has a penchant for creative pours. This summer, the bar's imaginative mixologists have prepared a series of new drinks, including the eye-catching Maize Collins. This unusual-looking cocktail features a healthy infusion of organic Farmers Gin, homemade corn cordial, blood orange puree, lemon juice, yuzu tonic and a baby corn garnish for a subtly sweet and sophisticated result.

Hidden away behind a faux phone booth on the mezzanine level of MO Bar at The Landmark Mandarin Oriental, PDT crafts wildly creative drinks in a luxurious, wood-filled atmosphere.

This summer, try the light and refreshing Safari – PDT's version of a gin and tonic made with a mix of gin, Italicus Bergamot Rosolio, Kabosu (a Japanese citrus fruit) and East Imperial Burma Tonic water.

And for round two? Sip on the Zuyu Collins. Made with Żubrówka, a bison grass vodka, Cocchi Americano, Giffard apricot liqueur, salted lime and yuzu soda, this is a low-ABV drink that's bright and balanced.

Zuma's new Glitter Gimlet shines with a winning mix of Gin Mare, yuzu and lime.

A favourite spot for weekend brunches and afterwork drinks, Zuma just introduced a new summer cocktail series. The bar's four new cocktails revisit beloved classics such as the Old Fashioned and Martinez, albeit with a contemporary Japanese twist.

Among the new tipples, the Glitter Gimlet is particularly refreshing -- not to mention photogenic. This citrus-forward aperitif is crafted with a blend of Gin Mare, yuzu cordial and lime then topped with shimmering balls of grapefruit-infused ice for an unexpected visual effect.

Three-Michelin-starred Italian restaurant 8½ Otto e Mezzo BOMBANA is an ideal spot for romantic drinks or business meetings thanks to the handsome bar and lounge. And this summer, you'll also have a chance to sample Bar Manager Devender Kumar's most refreshing creations. The restaurant's signature drink, The Optimist, never fails you. This rum-based tipple transports you to Havana with a balanced blend of Bacardi Superior white rum, ginger syrup, honey water, fresh basil leaves and lime juice.

For those who prefer a more spirit-forward tipple, the 8½ Negroni has a slightly lighter and smooth taste than usual, thanks to under-the-radar Italian digestif Barolo Chinato, mercerated lemon and orange slices, and grapefruit and orange bitters. "A Milanese-born cocktail, the negroni is a classic aperitif, resonant of outdoor cafes and reclining dolce-vita evenings!” says Bar Manager Devender Kumar. “Our contemporary update offers a splendid balance of flavours."
