The best advice ever given to Lifetime Achievement Award winner Umberto Bombana, and the words of wisdom he lives by.
The recent recipient of the Diner’s Club Lifetime Achievement Award 2017 at the annual San Pellegrino & Acqua Panna Asia’s 50 Best Restaurants awards, Chef Umberto Bombana shares some of the knowledge he has garnered and the life lessons learned over his illustrious career.
What has been your greatest accomplishment?
On a professional level, my greatest achievement was being awarded Three Michelin Stars and receiving the Diner’s Club Lifetime Achievement Award in 2017.
What is the most useful piece of advice you have ever received?
Show gratitude and never forget those who have supported you.
What is your idea of happiness?
Discovering good ingredients and making them taste good.
If you could sit down to dinner with four others, dead or alive, who would they be and why??
The Greek philosophers Socrates and Epicuro; Italian statesman and ruler of the Florentine Republic, Lorenzo de’ Medici, a well-known patron of the arts and collector of antiquities who allowed the Renaissance to become the great art movement that it did; and Italian painter and sculptor Modigliani, known for his modern style of portraits and nudes. I would have these four because I have a love of philosophy, a love of art, a love of life and a love of beauty.
Who inspires you and why?
Chef Ezio Santin, of the former Antica Osteria del Ponte which at the time had two Michelin stars - he was the first chef to train me up.
What advice would you share with someone looking to go into your industry?
You have to respect and appreciate the quality of your ingredients and have the sensibility to let them shine.
What do you know now that you wish your younger self had known?
Passion, perseverance and hard work.
What are your words of wisdom to live by?
Live healthily and enjoy everything in its natural way.
